Carol's goal in writing this book is to provide an unfiltered look at the journey so many people consider—to share the positives as well as the negatives of her journey and let you know that even though your weight loss may have stalled, increased, or not changed at all, there is hope!

ABOUT AUTHOR

 

Carol came from a family with a history of diabetes and weight struggles, resulting in depression. She underwent cosmetic surgery and gained both a newfound strength and resilience. This confidence encouraged her to write a tell-all, no holds barred blockbuster book, "What Goes Up Must Come Down: Let's Face It."

As a certified personal trainer in the state of California, Carol is passionate about working directly with seniors to assist them in remaining physically viable and independent.

Ingredients

  • 2 Cups fresh spinach leaves

  • 1 Ripe banana

  • 1 Cup chopped cucumber

  • 1 Cup chopped fresh pineapple

  • 1/2 Chopped Greek Yogurt

  • 1 Tablespoon honey (optional)

  • 1 cup unsweetened almond milk (or any other preferred milk)

  • Ice cubes (Optional)

CAKE

Ingredients

  • 2 Cups graham cracker crumbs

  • 1/2 Cup unsalted butter melted

  • 24 oz cream cheese, softened

  • 1 Cup granulated sugar

  • 1 Teaspoon vanilla extract

  • 4 Large eggs

  • Optional: Fruit sauce or toppings of your choice

SMOKED SALMON CANAPES

Ingredients

  • 11 Mini toasted bread slices or crackers

  • 4 Ounces smoked salmon, thinly sliced

  • 1/4 Cup cream cheese or goat cheese

  • 1 Tablespoon fresh dill, chopped

  • 1 tablespoon capers

  • Lemon wedges for garnish (Optional)
